Fermenting is the oldest method of vegetable conservation. In the winter fermented vegetables can substitute fresh vegetables because during the fermenting process carbohydrates turn into lactic acid, while other nutrients stay unchanged. The lactic acid accumulated during this process is what gives fermented products their specific taste and keeps them from going off by not allowing bad bacteria to multiply.

Natural (wild) fermentation. We often forget about the fact that our health, immunity and well-being is highly dependent on the vast army of the useful bacteria, our invisible little friends. They tireless participate in our metabolic processes by ceaselessly transforming various nutrients in the forms more suitable for our body. The result of their work we present as naturally fermented vegetables juices.
